We are glad to share with you today’s recipe: The Djoumblé

For this specific recipe you would need:

Dried okra (Djoumble)
– 3 Habanero peppers
– 2 to 3 roma tomatoes
– Some Palm nut oil(just a little for the taste,but it is not mandatory)
– Turkey
– Smoked fish
– Mushrooms
– Beef/pork neckbones
– Crabs
– One half of an onion diced/one whole onion
– 2 or 3 Seasoning cubes(it depends on how salty you eat)
– 1 Kableh (it is a thin wrapped dried leaf)

  • Step 1: In a pot (depending on the size of your family), boil the turkey,the smoked fish ,the mushroom, the pork or beef neckbones, the crabs, the tomatoes , the onions(diced and the whole). Add a little bit of the palm nut oil (3 times the little top of the water bottle).Add some water at the level of the meats and cover it. Boil until the tomatoes and the onions(diced and whole) are cooked. Then, put it on medium heat.***Don’t forget to take off the smoked fish after a couple minutes of cooking, otherwise it will scatter in the pot.
  • Step 2: When the onions and tomatoes are cooked, take them off from the pot and leave it on the side.
  • Step 3: Pour some of the base from the pot into a bowl, and mix it with the dried okra powder, work that through until you obtain an homogeneous thick paste.
  • Step 4: Pour everything together in the pot, mix gently until you obtain an homogeneous mixture.Add the kableh.
  • Step 5: Blend the tomatoes and the onions and pour it into the pot as well. Add the seasoning cubes,Squeeze some Habanero peppers.Add the smoked fish. Turn the fire on high. Let it cook until the tiny okra seeds are soft.Turn the fire off.It is ready!
    Tips: While it steams, grate some fresh onion. Hum! Delicious!
    You may serve it with rice,foutou(mashed banana plantain previously boiled).

En Francais

  • Mettre dans une marmite le poisson ou le poulet fumé ou la viande préalablement lavés et déposer la sur le feu. Ajoutez 1 oignon découpé fermer et laisser bouillir pendant 10 minutes.
  • Nettoyez les tomates, les piments et l’oignon restant et ajouter les dans la marmite avec 1 litre d’eau. Laissez le tout bouillir pendant 20 minutes. Retirer les tomates, les piments et l’oignon puis mixer le tout.
  • Ajoutez la pâte obtenue à la sauce, mélanger légèrement et laisser bouillir.
  • Prenez un quart d’eau tiède que vous mettez dans récipient avec un peu de potasse en remuant. Ajoutez-y la poudre de djoumblé et mélanger le tout jusqu’à obtenir une pate homogène et onctueuse.
  • Ajoutez les 2 cuillères à soupe d’huile rouge (facultatif).
  • Une fois le mélange obtenu, rajoutez le à votre sauce sur le feu et mélanger .
  • Ne pas fermer la marmite. Laisser cuire pendant 45 min.
  • Votre sauce est prête.
  • Bon appétit. Vous pouvez accompagné de riz ou de foutou (igname ou banane).
